Bacon Jam Garlic Patty Melt

    • 1/2 lb diced bacon
    • 1/2 yellow onion, diced
    • 3 garlic cloves, minced
    • 1 Tbsp honey
    • 1/4 cup brown sugar
    • 1/4 cup maple syrup
    • 1/4 cup apple cider vinegar

    • 4 slices of hearty bread (like sourdough or Texas toast)
    • 1 cup shredded Colby Jack cheese
    • 1–2 Tbsp butter (for toasting)
    • 1 clove garlic, halved

    Directions

      1. In a cast-iron skillet on your HALO Elite Griddle, cook bacon until crispy. Remove and set aside.

      2. Drain all but 2 tablespoons of the bacon grease.

      3. Sauté diced onions and minced garlic in the remaining grease until soft and fragrant.

      4. Stir in the honey, brown sugar, maple syrup, apple cider vinegar, and cooked bacon.

      5. Simmer for about 5 minutes until thickened and caramelized. Set aside.

      1. Preheat your griddle to medium heat.

      2. Lightly butter one side of each bread slice. Rub the other side lightly with a garlic clove for extra flavor.

      3. Place bread butter-side-down on the griddle. Add a generous layer of shredded Colby Jack cheese and a heaping spoonful of bacon jam.
