Smokey, citrus-y, bacon-y. Need we say more? These bacon wrapped scallops are as easy to make as they are to eat.
Ingredients
- 1 lb Bacon
- 1.25 lbs medium sized scallops
- Montreal Steak Seasoning
- Old Bay Seasoning
- Lemon
- Lime
Directions
- Preheat your Prime300 grill to 250 degrees.
- Pat scallops dry and season liberally with Old Bay seasoning.
- Lightly season one side of bacon with Montreal steak seasoning – less is more here, too much will over-power the scallops. Alternatively you can wrap the scallop and season the outside of the bacon at that point.
- Wrap unseasoned side of bacon around the scallops.
- Quarter lemon and lime and squeeze half of each on the scallops.
- Place wrapped scallops on grill and smoke until internal temperature is 130. This will take about 30-45 minutes. Flip after 20 minutes on the grill.
