Smokey, citrus-y, bacon-y. Need we say more? These bacon wrapped scallops are as easy to make as they are to eat.


Bacon Wrapped Smoked Scallops

Ingredients

  • 1 lb Bacon
  • 1.25 lbs medium sized scallops
  • Montreal Steak Seasoning
  • Old Bay Seasoning
  • Lemon
  • Lime

Directions

  1. Preheat your Prime300 grill to 250 degrees.
  2. Pat scallops dry and season liberally with Old Bay seasoning.
  3. Lightly season one side of bacon with Montreal steak seasoning – less is more here, too much will over-power the scallops. Alternatively you can wrap the scallop and season the outside of the bacon at that point.
  4. Wrap unseasoned side of bacon around the scallops.
  5. Quarter lemon and lime and squeeze half of each on the scallops.
  6. Place wrapped scallops on grill and smoke until internal temperature is 130. This will take about 30-45 minutes. Flip after 20 minutes on the grill.
