Ingredients
- 2 habanero peppers, chopped
- 1 cup apple cider vinegar
- 1 rack of spare ribs
- Salt, pepper, and garlic seasoning (or SPG by @kosmosq)
- 1 tbsp BBQ sauce
- 5 tbsp water
- 1 cup raspberry preserves
- ½ cup BBQ sauce
- 4 tbsp habanero-infused apple cider vinegar
- 2 tbsp honey
- Juice of 1 lime
Directions
Chop the habanero peppers and place them in a jar with apple cider vinegar. Set aside.
- Flip the spare ribs upside down and cut between each bone.
- Season generously with salt, pepper, and garlic seasoning.
Place the ribs in the smoker and cook at 250°F for 1 hour.
- In a small bowl, mix 1 tbsp BBQ sauce, 1 tbsp habanero-infused vinegar, and 5 tbsp water.
- Wrap the ribs tightly with this mixture and return to the smoker for another hour.
In a skillet over medium heat, combine raspberry preserves, ½ cup BBQ sauce, 4 tbsp habanero-infused vinegar, honey, and lime juice. Stir until smooth and heated through.
- Unwrap the ribs and coat them in the habanero sauce.
- Top with additional habanero slices.
- Return to the smoker for 1 more hour.
- Remove the ribs from the smoker and let them rest for 10 minutes.
- Serve and enjoy!
