Experience a burst of flavor with this unique sweet and savory combination! Smoked on the PRIME550. These irresistible, bite-sized delights feature kielbasa with a crown of pineapple. Perfect for any party, these crowd-pleasing, flavor-packed appetizers will be the highlight of any gathering!
Ingredients
- 2 Kielbasa Sausages (or smoked beef sausage)
- 2–3lbs of Thick Cut Bacon
- 1 Pineapple
- Chipotle Pecan Seasoning by Melissa Cookston
- Chives
- Stubb’s Original BBQ Sauce
Directions
- Preheat pellet grill or smoker to 275°F and begin prepping your bites
- Cut pineapple into 3/4in thick cuts in half-dollar diameter (as shown in video)
- Cut kielbasa into similar fashion
- Cut bacon perfectly in-half
- Dress bites by stacking pineapple onto kielbasa, wrap around the half-cut bacon and overlap bacon onto itself to give enough room for the toothpick to stick in and hold it all together.
- Place onto the warming rack, season with chipotle pecan, and onto the smoker for 1-1hr and 15 mins, or until bacon is finished cooking.
- Allow to rest for 5 mins. Top with Stubb’s, finish with chives, and dig in!
